Cod Spice
FISH CAKES
We don’t like to tell long winded stories or tell you things you already know, so here it is plain and simple.
From Nans kitchen to yours.
What you need:

2.5 pounds salt or fresh fish

3 pounds potatoes, peeled

1 yellow large onion, minced

Beer, 1 splash (optional)

2 tablespoons Cod Spice
-
1/4 cup bacon bits (approx.8 strips of bacon)

1/4 cup all-purpose flour for mix

1/2 cup all-Purpose flour for dredging

1/4 cup real butter
-
3 Tbsp bacon grease
-
Mustard pickles, for serving (optional)

Boil fish for 12 minutes.

Drain, cool, remove skin and debone.

Cook bacon bits or use real store-bought keep the bacon grease.

Boil potatoes in salted water until tender (approx. 12-15mins). Drain and cool. Roughly mash, you want it a little chunky.

Sautee onions until caramelized, (optional: give them a splash of beer to deglaze the pan), simmer remove from heat.

Add fish, caramelized onion, bacon, 1/4 cup flour & Cod Spice to the potato pot mix well but do not mash too much.

Use an ice cream scoop to portion them evenly & form into patties.

Dredge fish cake patties in the 1/2 cup flour.

Heat butter & bacon grease in a pan on medium heat. When the oil is hot - but not smoking - start frying the fish cakes until they’re golden brown on both sides.

Serve with home fries and mustard pickle
*Go the local farmers market and get some good homemade mustard pickle.
